What It Is
Sulforaphane forms only when you break the raw plant; it does not sit ready-made in broccoli. The plant keeps an inert precursor, glucoraphanin, in one compartment and the enzyme myrosinase in another. Chopping, chewing, or a bite from an insect brings the two together, and sulforaphane appears at once. Young broccoli sprouts hold the most: a three-day-old sprout carries far more precursor than the mature head, which is why sprouts are the food most studied.
Anatomy of the Practice
1On the plate, in the first minute
Break the tissue and the reaction starts; heat it first and the reaction cannot. Chopping or chewing raw sprouts triggers it within seconds. Boiling or heavy cooking destroys the enzyme first, so cooked broccoli yields far less unless a myrosinase source is added back.
2In the cell, over hours
Absorbed sulforaphane activates Nrf2, the protein controlling the cell’s own defense genes. It turns up a battery of phase-2 detox and antioxidant enzymes that neutralize and clear reactive compounds. This induction is robust in cell and animal work and rises for a day or two after a dose.
3Over weeks
Kept up for a week or two, the enzyme induction produces measurable downstream effects in people. These show up as shifts in markers, not as a single dramatic dose.
What It Does
The human results are modest, and each rests on one trial or two. Each is a surrogate marker, faster excretion or a lab value.
- Air pollution. In a rural, heavily polluted region of Qidong, China, a daily broccoli sprout beverage raised urinary excretion of two pollutant breakdown products. Benzene's marker rose about 61% and acrolein's about 23%. The rise appeared within days and held across twelve weeks in 291 adults. That is faster clearance of two inhaled pollutants.
- Blood sugar. A twelve-week trial of 97 people with type 2 diabetes gave a concentrated sprout extract. Fasting glucose fell by about 8%, from 160 mg/dL (8.9 mmol/L) to 148 mg/dL (8.2 mmol/L), and only in the obese, poorly-controlled subgroup.
- Airway enzymes. Sulforaphane taken by mouth switched on protective phase-2 enzymes in the cells lining the nose, more so at higher doses. The pathway is active in living human tissue.
- Autism behavior. A small trial of young men reported behavior scores improving by about 34% on one caregiver-rated scale and 17% on another over eighteen weeks. Scores drifted back toward baseline after the supplement stopped.
Two findings pull the other way. A companion trial in the same region aimed at aflatoxin, a liver carcinogen, found no overall change in its DNA-adduct marker. Any benefit reached only people whose bodies converted the precursor well. Each of these trials is small or single, and needs independent repetition before it settles anything.
The weakest claim of all is cancer prevention. Sulforaphane clears carcinogens in animals. Crucifer eaters show somewhat lower cancer rates in observational studies, where those people also differ in many other ways. What has been tested in humans are short marker trials. No completed human trial has counted cancer cases. The multi-year trials that would settle it, following thousands of people to count cases, have not been run.

Behavior scores improved 34% (ABC) and 17% (SRS) in young men with autism over 18 weeks, fading after stopping
In a small trial of young men with autism, sulforaphane improved behavior and social-responsiveness scores, and the gains faded after the supplement was stopped.
A randomized, double-blind, placebo-controlled trial enrolled 44 young men aged 13 to 27 with moderate to severe autism spectrum disorder, with 29 receiving daily sulforaphane for 18 weeks. The treated group improved by about 34% on the Aberrant Behavior Checklist (P<0.001) and about 17% on the Social Responsiveness Scale (P=0.017) versus placebo, while the placebo group changed by under 3.3%, and scores tended to return toward baseline after the supplement was discontinued. The trial is small, short, and enrolled only males, and the caregiver-rated behavioral scales are subjective endpoints.

How It Works
The mechanism is the strongest part of the evidence. Sulforaphane is one of the most potent known natural activators of Nrf2. Nrf2 is a master switch that stays inactive until a compound like sulforaphane releases it. It then enters the nucleus and switches on a coordinated set of protective genes. Those genes build the body's phase-2 enzymes. Those enzymes tag reactive, potentially damaging molecules and speed their removal. This was worked out from broccoli in the early nineteen nineties and has been reproduced many times since.
A strong mechanism is only a starting point. The biochemistry is settled and the animal data extensive, while the human trials are small, short, and fewer than the enthusiasm suggests.
Dose and delivery decide everything here, more than for almost any other compound. The same lesson runs through whole foods: form and preparation change what a plant delivers.
Getting It Right
Whether you get anything at all comes down to getting the active compound into you. That enzyme is fragile, so the same label dose can deliver wildly different amounts. A drink of preconverted sulforaphane was absorbed at about seventy percent. A drink of the plain precursor, still needing the enzyme, was absorbed at about five percent. Gut bacteria convert a fraction, but the amount varies widely between people. The intact plant carries its own enzyme, so food forms the active compound reliably.
Ways to Do It
Almost everything here is about getting the active compound to form and survive. For most people the free rungs do the job. The supplement is placed last because the active compound depends on an enzyme most extracts have lost. A well-built product still delivers it, while the plant carries the enzyme itself.
Broccoli, cabbage, kale, cauliflower, Brussels sprouts, arugula and radish all carry glucosinolate precursors. Eating a range of them several times a week is the base. The observational link with lower disease sits with the whole vegetable. Some raw content in the mix helps, since raw plants keep the enzyme that cooking destroys.
Thorough chewing of raw broccoli or sprouts breaks more tissue and forms more sulforaphane than swallowing it barely chewed. A raw side, a slaw, or sprouts on a sandwich keep the enzyme intact and let it act before you cook the rest.
If you boil or heavily cook broccoli you destroy its own myrosinase and lose most of the yield. Mustard seed, horseradish and wasabi carry an active myrosinase of their own. Stirring a pinch of plain mustard powder into cooked broccoli after it cools a little restores the enzyme and recovers much of the sulforaphane you would otherwise lose.
A brief steam of a few minutes softens broccoli while keeping more of the myrosinase enzyme intact than boiling does, so more sulforaphane can still form. Boiling leaches the water-soluble precursor into the water and inactivates the enzyme. Light steaming keeps most of the potential.
Ready-grown broccoli sprouts from a shop are the concentrated food source, carrying many times the precursor of the mature head. Eat them raw or barely wilted so their enzyme survives. They cost a few dollars a carton and spoil quickly, so buy small and often, and rinse well.
Two approaches make the dose dependable: grow the sprouts yourself, or choose a supplement built to deliver the active compound.
Grow broccoli sprouts at home from seed in a jar. A few dollars of seed yields many batches. Rinse them twice a day for three to four days. Eat them raw at their peak, when precursor content is highest and the enzyme still alive. It is the cheapest and most potent source, and you control the freshness completely.
If you choose a supplement, judge it by how much active compound it delivers. Two types are built for that: a preconverted, stabilized sulforaphane, or a glucoraphanin extract that also supplies active myrosinase. Independent third-party testing confirms what is in it.

Broccoli sprout compounds were well tolerated at studied doses, with only mild effects
A phase I clinical study administered escalating doses of broccoli sprout preparations rich in glucosinolates or isothiocyanates to healthy volunteers and monitored safety, tolerance and metabolism. No significant or dose-limiting toxicity was observed over the doses and short duration studied. Thyroid, and very large raw crucifer intakes
Raw cruciferous vegetables contain goitrogens, compounds that can interfere with the thyroid’s use of iodine, mainly when intake is very high and iodine is low. Ordinary food amounts are not a concern for most people. If you have a thyroid condition or eat very large daily quantities of raw crucifers or sprout extracts, raise it with your thyroid doctor.
Raw sprouts and infection risk
Raw sprouts of all kinds have been linked to outbreaks of foodborne illness, because the warm damp conditions used to grow them also suit bacteria. Pregnant women, young children, older adults and anyone with a weakened immune system are usually advised to cook sprouts before eating them. If you grow your own, use clean equipment and rinse well, and when in doubt cook them.
Digestive upset and gas
Crucifers and their fibers commonly cause bloating and gas, and concentrated sprout extracts have caused mild digestive complaints in trials. This is usually a matter of amount. Starting small and building up, and favoring lightly cooked over large raw servings if raw does not sit well, generally settles it.
Supplements vary widely and are loosely regulated
Because the active compound depends on a fragile enzyme, sulforaphane products differ enormously in what they deliver. A large precursor figure on a label does not mean a large active dose. Favor a product that is preconverted or supplies active myrosinase and carries independent third-party testing, so you know what is in it.
Do not treat it as a cancer treatment
Sulforaphane is a food. The human research on it measures markers over a few months, well short of testing it as a treatment. Manage any serious illness with your clinical team, and keep sulforaphane in that conversation.

Common Questions
Does sulforaphane prevent cancer?
No. In more than thirty years of study, the disease-outcome trials that would prove it have never been run.
What is solid enough to act on is simpler: eating a range of crucifers as ordinary food is a sound habit whether or not that question ever resolves.
Are broccoli sprout supplements worth taking?
The active dose depends on an enzyme most extracts lose in processing, so the precursor number on the label does not reveal it. A preconverted product, or one that adds live myrosinase with third-party testing, is built to deliver the compound. Fresh or home-grown sprouts carry that enzyme in the plant.
Should I eat broccoli raw or cooked?
Both, on purpose. Keep some raw or barely steamed from the plants you want this compound from, because heat disables the enzyme that makes it. Cook the rest however you like; you still get the fiber, the other nutrients, and vegetables you will actually eat. Across a week, that variety does more for you than perfecting any single meal.
Can sulforaphane help with blood sugar or autism?
Not enough to change how diabetes or autism is treated. For blood sugar, the deep evidence sits with diet and weight loss. Type 2 diabetes is largely a diet-driven disease, built over years on ultra-processed food heavy in sugar and refined starch, so the whole-food and weight-loss levers come first. Watch for larger, independent trials before treating a sprout extract as a therapy.
