How It Works

With too little iodine the gland cannot make enough hormone, the classic cause of goiter and hypothyroidism, and seaweed is among the richest food sources of iodine, so a measured amount can fill a gap where the diet is short. The same gland is also sensitive to an excess. A sudden large iodine load can trigger a transient shutdown of hormone production, the Wolff-Chaikoff effect, or in a susceptible person a flare of overactivity, the Jod-Basedow phenomenon.
The dose-response is U-shaped: both too little and too much iodine cause harm, and the safe amount is a modest band in between.
The other parts of sea moss contribute less. Its minerals add to intake the way any mineral-rich food does, in proportion to how much you eat, which for a gel is far less than the per-100-gram laboratory figures suggest. The Folk Tradition And The Chinese Medicine View
Sea moss has its own tradition, and it belongs to the Atlantic coasts. Along the coasts of Ireland, Chondrus crispus was gathered, dried, and simmered into a gel from at least the early 1800s, taken as a nourishing food for the sick and the recovering and as a demulcent remedy that soothed coughs and sore throats, its gel understood to coat and calm irritated membranes. It fed people through lean times, including the Famine years.
Carried across the Atlantic, the same habit became the Caribbean sea moss drink, blended with milk, spices, and vanilla and taken as a tonic for energy, strength, and vitality, a use it still holds across Jamaica and the wider region. Two centuries of steady food-and-tonic use is a long record, the kind of use that predates any nutritional analysis and sits alongside what that analysis later found: a mineral- and iodine-rich seaweed used, sensibly, in modest amounts.
Irish sea moss has no entry in the classical Chinese pharmacopoeia; it is a North Atlantic seaweed, and the classical texts were written far from its waters. The Chinese tradition worked extensively with other marine plants, and that is where sea moss connects to it. Kun Bu (kelp) and Hai Zao (sargassum) are salty and cooling, described as softening hardness and dissipating nodules, and as transforming Phlegm. Their classic use was for goiter and neck swellings, which centuries later turned out to be, in many cases, the thyroid enlargement of iodine deficiency. The tradition reached for seaweed to treat goiter long before anyone knew iodine existed. That convergence is offered here as a lens on sea moss, not as proof of anything.
The tradition also dosed these substances with care. Salty, cooling marine herbs were used sparingly, because in excess their cold nature can burden the Spleen and Stomach and weaken digestion, and Hai Zao sits among the classical incompatibility cautions, traditionally kept apart from Gan Cao (licorice).
